Andreas - Chef at GK

A company’s growth is usually measured in terms of the increase in turnover, profit and number of employees, but Andreas, the ‘Head Chef’ at GK Software, measures it based on kilograms and liters. “Eight years ago we served 200 meals a month but that’s now increased sixfold to 1,200,” says the head of the canteen at the company headquarters in Schöneck.

We roll the roulades ourselves. 1,200 meals, 100 kg of potatoes, 25 kg of gherkins, every week.

Around 250 employees plus countless visitors expect lunch to be served punctually every day. Plus the canteen caters for events such as customer training sessions and the typical meetings that take place at a company headquarters. “Those activities are growing all the time – and when new software is being tested the colleagues work until late into the night so we serve evening meals then too.” Although the sale and development of software does not entail hard physical labor, the company’s employees know how to eat and drink well: they get through 100 kg of meat, 700 eggs, 60 liters of soup, 300 liters of coffee and 800 liters of mineral water per week at the head office alone.


Regional products

The canteen menu ranges from local pot roasts to dumplings and from vegetarian risotto to fresh salads. The summer barbecues and ‘surprise buffets’ are legendary and would not seem out of place in a hotel. But that is no coincidence, because after completing his training in a company canteen for 5,000 employees Andreas first worked at a country hotel in Swabia and then spent two years in the kitchen at a 5-star hotel in Bermuda. “We roll the roulades ourselves. I want to cook here, not just heat things up.” Having been born in Chemnitz, which is close to Schöneck, he places great importance on sourcing ingredients locally. “To us, quality is very important here so that everyone who dines in the canteen – whether a customer, director or colleague – leaves here happy and satisfied.” Therefore, he works closely with a local baker in Schöneck, orders the meat from a butcher in Oelsnitz, and sources fruit and vegetables from Oberlosa and the mineral water from Bad Brambach. All the ingredients are delivered fresh every day from 5:30 h onwards. In employee surveys, satisfaction is usually rated by awarding a score from one to ten. In Andrea’s case, the kilos and liters speak for themselves.
